Clementine Chickpea Pita Salad
Rainbow Lunchboxes
2 large pita pockets · Active 15 min · Total 15 min
Chickpeas and torn clementine segments make a filling with soft, juicy and crunchy parts. A little yogurt binds the chickpeas without hiding their shape. The adult opens the can; the young cook peels, stirs and fills the pitas.

Before you begin · grown-up check
The grown-up opens, drains and rinses the chickpeas and helps the child open and fill the pita pockets.
- Together wash hands with soap and water and clean the work surface.
- Adult checks ingredient labels, equipment and task suitability; ages are starting guides, not a guarantee of readiness.
- Adult handles the can and its sharp edges.
Ages are a starting guide. A grown-up checks your readiness and stays nearby. Follow the actor label on every step.
Let’s make it
- Grown-upOpen the chickpea can, handle the lid and edges, then drain and rinse the chickpeas. Measure 1 cup into the bowl and refrigerate unused chickpeas.
- Young cookWash and dry the clementine, peel it and separate the segments. Remove any seeds and tear the segments into smaller pieces.
- Young cookMash about half the chickpeas against the side of the bowl with the fork, leaving the rest whole.
- Young cookStir in the yogurt, lemon juice, cumin, carrot and clementine pieces.
- TogetherTear an opening at the top of each pita. Spoon in half the salad, keeping any filling that will not fit as a side portion rather than forcing it inside.
The skill you’re learning
Partly mashing beans creates a spread that still has texture. The mashed portion acts like a soft glue for the whole beans and fruit.
Try one change
Replace the clementine with 1/3 cup drained ready-to-eat diced peach from a plastic fruit cup.
Serving & storing
Refrigerate covered at 40°F or below within 2 hours of preparation (1 hour above 90°F); use within 1 day. For a packed lunch, use an insulated lunch bag with two cold sources and keep chilled until eating; discard uneaten packed portions after lunch. Store salad and pitas separately if packing ahead.
