Corn and Black Bean Confetti Salad
Rainbow Lunchboxes
3 lunchbox side portions · Active 15 min · Total 15 min
Corn and beans make an easy scoopable salad. The grown-up opens the cans and chops a pepper while the young cook measures the dressing. Little pieces matter here: they help a spoonful carry several colors at once.

Before you begin · grown-up check
The grown-up opens and drains the cans, rinses the beans and chops the pepper; the child measures and mixes.
- Together wash hands with soap and water and clean the work surface.
- Adult checks ingredient labels, equipment and task suitability; ages are starting guides, not a guarantee of readiness.
- Adult handles all can edges and pepper chopping.
Ages are a starting guide. A grown-up checks your readiness and stays nearby. Follow the actor label on every step.
Let’s make it
- Grown-upOpen the cans and handle the lids and edges. Drain and rinse the beans, drain the corn, and measure the listed amounts; refrigerate unused portions.
- Grown-upWash the pepper, remove the stem and seeds, and dice enough to measure 1/2 cup. Put the knife away.
- Young cookStir the lime juice, oil and cumin together in the small bowl.
- Young cookCombine the measured beans, corn and pepper in the mixing bowl. Add the dressing and stir gently.
- TogetherDivide into three side portions and serve or refrigerate immediately for lunch.
The skill you’re learning
Stir gently when ingredients are already cooked and soft. A broad turning motion mixes the salad while keeping most beans whole.
Try one change
Replace the black beans with the same amount of drained, rinsed canned kidney beans; the adult still handles the can.
Serving & storing
Refrigerate covered at 40°F or below within 2 hours of preparation (1 hour above 90°F); use within 1 day. For a packed lunch, use an insulated lunch bag with two cold sources and keep chilled until eating; discard uneaten packed portions after lunch.
