Couscous-Stuffed Pepper Boats
Family Dinner Helpers
4 stuffed pepper halves · Active 25 min · Total 1 hr 5 min
Bell pepper halves make colorful boats for couscous and chickpeas. The filling is prepared first so the peppers can bake until tender without drying out the grains. These are small dinner portions to serve with the rest of the family meal.

Before you begin · grown-up check
The adult halves peppers, opens cans, pours boiling water, handles the oven and checks the filling temperature.
- A grown-up checks ingredient labels, the workspace and the young cook’s readiness before starting.
- Adult heats oven to 400°F, cuts peppers lengthwise, removes seeds and stems and opens chickpeas and tomatoes.
Ages are a starting guide. A grown-up checks your readiness and stays nearby. Follow the actor label on every step.

The skill you’re learning
Pressing a spoon lightly into each pepper gets filling into the corners. Avoid compacting the couscous, which should stay fluffy.
Try one change
Use 3/4 cup drained canned white beans instead of chickpeas.
