Hummus Carrot Pita Pockets
Toast & Sandwich Lab
2 filled small pita breads · Active 9 min · Total 9 min
A pocket is a useful way to keep crunchy shreds together. These small pitas hold hummus, ready-shredded carrot and torn spinach. Spread inside before filling, and the hummus helps the vegetables stay in place.

Let’s make it
- Young cookTear a short opening across the top of each pita with clean hands; gently open the pocket without pulling it apart.
- Young cookTear the spinach into small pieces in the bowl and mix with the shredded carrot.
- Young cookUse the blunt spreading knife to spread 2 tbsp hummus inside each pita.
- Young cookSpoon half the vegetables into each pocket, pressing lightly rather than stuffing it tightly. Serve on the plate.
The skill you’re learning
A pocket can split if filled in one big push. Add small spoonfuls and spread them toward the bottom before adding the next spoonful.
Try one change
Replace the spinach with 1/2 cup washed, ready-shredded romaine lettuce.
Serving & storing
Refrigerate covered at 40°F or below within 2 hours of preparation (1 hour above 90°F); use within 1 day. For a packed lunch, use an insulated lunch bag with two cold sources and keep chilled until eating; discard uneaten packed portions after lunch.
